Whatever you prefer is how it should be done. You want to drink AEON RED chilled? Go for it. You want to drink it just a bit warmer? Go for it. Shake it or not? Same. Whatever you prefer is key! Please know that all flavours develop beautifully when the lees got a good shake up. In case you don’t want any deposit in your glass, don’t shake, open the bottle carefully and pour your glass gently.

AEON RED 2021/2022 - 11% vol., 0,7g residual sugar, 8.1g acidity, <10mg total sulfites, 840 bottles produced, bottled in February 2024, harvest September 2021 + 2022, EAN-bottles: 9120069512076 - EAN-case: 9120069512069 VINIFICATION whole bunch fermentation of each grape variety separately in open top vats. stamped by foot after 6 days, kept on skins for another 4 days, each variety matured separately in barriques, blended together 1 day before bottling. bottled before the full moon arose. released in SPRING 2025
AEON RED 2015 - 12.5% vol., 1.1 residual sugar, 5.7 acidity, 19mg total sulfites VINIFICATION during harvest, all grapes are processed in the backyard. The grapes got partially destemmed (approx. 10% stems in the mash) and fermented naturally in stainless steel and fiberglass vats. After 12 days we pressed the mash and the wine was pumped into one barrel (225l Barrique) into the cellar. The wine matured on gross lees for 4 years and 2 months, without any additives, without fining, without temperature control and without filtration. We bottled it by hand on November 12th, shortly before the full moon arose to enrich AEON with the moons energy.
