USER’S GUIDE
Whatever you prefer is how it should be done. You want to drink LEMON chilled? Go for it. You want to drink it just a bit warmer? Go for it. Shake it or not? Same. Whatever you prefer is key! Please know that all flavours develop beautifully when the lees got a good shakeup. In case you don’t want any deposit in your glass, don’t shake, open the bottle carefully and pour your glass gently.

Long Story Short:
Maybe you remember that vintage 2018 of HOMOK made pinking. Alex was thinking a lot about how to prevent this chemical reaction without the use of sulfur. Since we believe that Sauvignon Blanc was responsible for pinking, we picked SB separately and vinified it separately.
We would never have made a Sauvignon Blanc Carbonic if not for the pinking in HOMOK 2018. This fact pretty well matches the saying:
When life gives you LEMONS, make lemonade from them.
That explains it all, right?

Sauvignon Blanc 100% or Pinot Noir 100%
VINEYARD SITE – SEEFELD – sandy soil
Seefeld – sandy soil – Seefeld is situated in the west of Neusiedl am See, at the last bits of solid land before the marshes of the lake start. The whole plot is flat, dry and very windy. Since Seefeld is hot and straight in the haze of lake Neusiedl, the grapes grow very intense aromas.
SAUVIGNON BLANC (1 plot – planted in 1997) size 0.17 hectare
PINOT NOIR (1 plot – planted in 1991) size 0.3279 hectare
VINIFICATION
in the vineyard, whole bunches were put into a 750l open top plastic-vat, which was then driven back to the cellar. Constant addition of CO2 ensured a precise fermentation. After about 6 days, we stomped the bunches and sometimes extend the skin-contact up to 16 days. Then, we took off the juice and pressed the mash. Wine went straight into Barriques (225L). natural fermentation. no temperature control at any stage of winemaking. no air-condition in the cellar. occasional batonnage. matured on gross lees for several months without any additives. no fining. no filtration. no sulfites added. bottled by hand.
